Fudge recipe? Is it one where a diabetic could substitute sugar for stevia or something? I'm crazy about fudge and cookies
and other sweets
and would love recipes that allow for substitutions - unfortunately, my recipe, while frightfully -easy- uses sweetened condensed milk.

There's this wonderful fudge shop on Pier 39 here in SF...their vanilla caramel fudge...nom nom nom. Alas, I have put myself on a diet. I'm cutting out sodas, sugary snacks....replacing snackage with fruits and veggies. It's hard to stick to that when you're poor, however. The bad, fatty, sugary foods are at least cheap...

Some of Dots older lamps are ok, I think she got lazy for a bit.
Speaking about sugar, I downed a 2lb chocolate bunny today. I would worry about getting fat but I think I might die from sugar over load first. I see pretty colors o.0

Whut? A bag of carrots is way cheaper than a box of cupcakes. Apples are cheaper than chips, especially considering how filling apples are compared to chips. I regularly make a bean and carrot chili that feeds my boyfriend, who's a big guy, and me for at least 3 days, that costs like $6 total. The pre-processed, fatty, salty stuff is far more expensive than fresh food.

The only way I'd eat a carrot is if it was made out of milk chocolate.
The only thing I remember about Darqstar's fudge is that it was ridiculously easy to make and it disappeared like a snowball on a hot stove. I can't believe I didn't store it on my hard drive with all my other can't-miss recipes.

The only reason I'm not eating fresh veggies right now is my jaw - hell, today I can't even manage what I've been eating, all I can think is I've overdone it. And carrots? Only way I'd manage those is cooked to mush and that's just gross.

Easy, breezy!
Microwave Fudge Recipe
3 c Semisweet chocolate chips
1 cn Sweetened condensed milk
1/4 c Margarine
1 c Chopped walnuts (opt)
The walnuts are optional of course. I usually throw in a cup or two of marshmallows. This makes the fudge puff up something crazy. If people are not alergic, I put in pecans instead of walnuts and call it "Rocky Road."
Place all ingredients except walnuts in large microwave-safe bowl.
Microwave on Medium until chips are melted (3-5 minutes), stirring
once or twice. Stir in nuts. Pour into well-greased square baking
dish 8x8. Refrigerate until set. Cut into squares.
Sorry, no diabetic, sugar free version. I don't know what you could do for the milk. I know there is sugar free baking chocolate out there, and you can add Splenda, but I don't know anything you can use for the sweetened condensed milk. I suppose you could try evaporated milk, but I don't know if that will do it. And I don't know where you can buy "unsweetened condensed milk," and I don't know if it would work if you could buy it. Maybe if you added some splenda or equal to it.

And evaporated milk makes a thick fudge icing. I accidently used it once.

It doesn't get much simpler than this. And the fudge is never grainy either. People always rave to me "You make the best fudge!" I haven't the heart to tell them that it really isn't a huge project. Whenever I make fudge gifts, people think I worked for hours, just for them.

The beauty of fudge. And folks do like getting it, and its not even that expensive to make a pound or three. Its how I handled christmas this year for my sisters and their family.
